It’s peanut butter, sure, but it’s not meant to be the peanut butter or even represent any particular peanut butter.
Instead, it comes with a detailed document describing all of the kinds of measurements you could take on it and their expected results. If you’ve got a peanut butter testing machine, you can put some in there and make sure it spits out the same result.
So, you’re not comparing any peanut butter against it, just your machine’s results against the results expected.

It’s easy to make peanut butter. It’s difficult to make each batch “chemically” identical! (Yes, chemically identical is impossible in a product like peanut butter, but identical enough for the purpose)

This is akin to selling a calibrated 1 kilogram cube of lead, with a precision of 1 nanogram and specified purity, for $1000. You are not just buying an overpriced $3 block of lead, but one that can be precisely used for calibrating machines, equipment, or processes.
- jwestbury 1 year agoCorrect. Veritasium actually did a video on exactly this set of items last year[0]. The tl;dr is that NIST has a large collection of items which are rigorously produced and tested, with detailed documentation about their composition and test results, which allows companies to test their own products to very specific standards.
For instance, peanut butter has aflatoxins -- known carcinogens. NIST's standard peanut butter has known levels of aflatoxins. By purchasing this peanut butter and testing it on your own peanut-butter-aflatoxin-sensing machine, you can calibrate your machine to detect aflatoxins in peanut butter to a reasonably high precision.

- espadrine 1 year agoThis is a bit of a misunderstanding on the part of NileBlue: the NIST materials are not pure; they are produced mostly normally. The only reason they are expensive is that, once prepared, very precise measurements have been done on them, available along the purchase, so that food manufacturers can calibrate their machines.

- dooglius 1 year agoPresumably, but the question is what kind of lab measurements need this and why, as opposed to a simpler substance?
- gspencley 1 year agoI'm speculating, but peanut butter is a common food for rodents. If you're conducting research using lab mice or rats and the diet of these animals needs to be very tightly controlled then you might need something like this?
- etrautmann 1 year agoin addition to the suggestion of lab food for rodents, presumably allergen testing for peanut allergies, devices or reagents used to detect allergens could be a large (and growing) use case.

- RIMR 1 year agoPeople act like this price tag is high, but it's not the product you're paying for, it's the guarantee that the reference material has been exhaustively tested to meet an exact standard. This is a small price to pay if you're in food manufacturing, and a huge benefit to us all that there exists such standards.
- dfxm12 1 year agoWhat is the benefit to food manufacturers? Is it something like a producer can't sell something (at least not as "peanut butter") if it isn't similar enough to this reference?
How is it used compared to, say, a written standard?
- apendleton 1 year agoIt's more like: you have a machine that evaluates whether the peanut butter you're producing is up to spec (right viscosity, right fat content, whatever), and if your machine complains and says your peanut butter isn't coming out right, you need a way to know if the problem is actually with your peanut butter or if it's that your peanut butter testing machine is miscalibrated. If you put the known-acceptable reference peanut butter through it and your machine says that's fine, it's your peanut butter, but if that also produces an error, you know it's your machine.

Let’s say you are a large food producer and you have to make a pb&j sandwich. You are going to do a great deal of measurement, taste tests and other experiments to verify your sandwich is what it says on the box. Also packaging will be highly dependent and also even the nutrition label. Do you want to worry in the design phase that your sandwich has a variable consistency and weight ? No .
- waynesonfire 1 year agoSuppose you're in the business of preventing peanut allergy death. It may be beneficial to have a known sample of a peanut butter during R&D.

Its used for calibrating their instruments (or to validate the calibration of their instruments), which are THEN used to report on their products contents, which if they are found to be sufficiently in error there are adverse consequences.
Having a reference material whose composition is very certain is important here.

For example if you are a company that has lab equipment that analyzes the nutrition content of a food sample, they could use this peanut butter as a reference sample to make sure their equipment is properly calibrated.

- evanb 1 year agoYou can't take a written standard and put it into your mass spectrometer (or other equivalently fancy food-testing device) to calibrate it.

- V__ 1 year agoVeritasium [1] did a video of exactly this and explains why it exists [at 2m35s]:

Those values have been measured by the manufacturer using different machines and analytical techniques. But how do you know those results are accurate? Is this probably just like peanut butter from one of the major peanut butter manufacturers, and then NIST just carefully measured and tested it?

Weird aside, my mother burned out her immersion blender attempting to reconstitute a jar of natural peanut butter. I now stir a few jars for her when visiting.
- silotis 1 year agoAccording to the pdf the source isn't even pure peanut butter. It also contains sugar and vegetable oils so it's probably based on one of the cheap emulsified varieties.
